Gluten free popsicles

The very first reaction I received from Jeremy (my now fiance!) was “avocado, really?  Is there any fruit in it?  I want ice cream cake instead.”

Yes, really avocado! And, by the way, avocado is a fruit 😉

Avocado is smooth and creamy and makes the perfect ingredient for popsicles.  The flavour of avocado is pretty neutral so whatever you add to it, will determine the flavour profile of your recipe. So avocado can be savoury or sweet.

I kept this recipe pretty simple, which is what I prefer.  The easier to make, the better right?

Oh, and by the way, Jer’s reaction once he tried it was “oh wow, that’s actually really good.”  Geesh, well, of course it is!

Avocado Lime Ice Pops: makes 6 popsicles

2 avocados, peeled and core removed
2 limes, zested (zest is the peel of the fruit)
3 limes, juiced
5 tablespoons honey
1 and 1/4 cup water

1. Blend everything in a blender and blend until smooth.
2. Pour into popsicles molds and freeze for at least 6 hours.
